Hello! On Wednesday it was time for the oldest tingkat son Kevin's student. There had been much to prepare for it! Everything was perfect, the sun was shining and it was a lovely day. It was a proud mother that brought a few tears :-) Student breakfast buffet consisted of double-marinated pork tenderloin, marinated chicken breast, smoked ham, potato salad, green salad, fruit, cold sauces, bread rolls and cheese and crackers. When you have the buffet one can calculate about 50 grams of meat / person for every kind of meat you have! I had 3 kinds of meat! Recipe for marinated chicken 35-40 pax (the recipe tingkat I found at matklubben) Ingredients 2 kg chicken BBQ Seasoning 1.5 cup olive oil 4 tbsp sweet chilli sauce 2 teaspoons salt 1 package frozen herbs Provencale 1 cup sliced chives 2 chopped garlic cloves 1 lemon, grated rind and the juice marinated chicken breast, proceed as follows Preheat oven to 175 degrees. Rub fillets with barbecue seasoning. Insert a meat thermometer tingkat in the thickest part of the fillet. Place in the oven until the thermometer shows 75 degrees. Mix in the meantime all the ingredients for the marinade. Let the meat rest for a while after you take it out of the oven, then cut the fillets into slices and arrange them nicely on a platter. Spoon over the marinade. I prepared the chicken the day before I serve it. Perfect for the buffet table. Double Marinated fläsfilé tingkat (original recipe found at concoct) Double Marinated Pork Ingredients about 35 people at the buffet table 2.5 kg pork tenderloin Marinade 1: 8 tablespoons soy sauce 4 tablespoons hoisin sauce 2 tsp salt 8 tablespoons oil 4 teaspoons sugar Marinade 2: 2 cups white vinegar 2 cups water 4 cup olive oil 4 teaspoons salt 2 teaspoons coarsely ground black pepper finely chopped 3-4 cloves garlic 2 cups chopped parsley 8 tablespoons drained capers tingkat MARINADE 1: Mix together all ingredients are soy sauce, hoisin sauce, tingkat salt, oil and sugar. Place the pork tenderloin tingkat in a sealed plastic bag or jar with a lid and turn over the marinade. Marinate in approx. 3 hours or more, turn the bag / jar occasionally. tingkat (I marinated my overnight) Start the oven, 175 degrees. Bring out until the meat and put it on a rack in a roasting pan. Insert a meat thermometer and cook until the meat thermometer shows 76 degrees, approx. 40 minutes. Turn the meat once during roasting. Remove the meat from the oven and wrap the meat in foil, let it cool. MARINADE 2: Mix together all ingredients, tingkat vinegar, water, oil, salt, black pepper, crushed garlic, chopped parsley and capers that are drained. Once the meat has cooled sliced it into 1/2 cm thick slices. Place slices in a bowl and beat over marinade second Place the dish cold. Marinate the meat overnight (4 hour).
